Powerful scents of pressed apple, candle wax and candle wax balsam lift out of the glass. The round, concentrated palate offers tart green apple, white peach, lime and energizing mineral notes alongside crisp acidity. Aromas of vanilla, baking spice and mature peach follow through to the warm, lightly baked palate. It has a nice, smooth feel that ends on a note of peach. (For the Alsatian variety, this is very pure in the Cahors, showing rich, ripe black fruit, oodles of spice and toast, and a lingering touch of smoke. The contrast with the acidity is great, making it refreshing now and a good choice for warm red meat.
